Barley risotto with baked zucchini, pesto and arugula

Finely chop the onion. Zucchini and tomatoes are cut into small cubes.

Add the tomatoes to a bowl with the lemon juice, 1 tablespoon of oil and 1/3 of the onion and mix well.

Heat a little olive oil in a saucepan and sauté the onion for 3-4 minutes until it becomes transparent. Add the crushed garlic and leave for another minute. Add barley, mix well, then add 400 ml of hot water and concentrated cube and bring to the boil. Reduce heat to low and simmer for 10 minutes until barley is cooked through. Add more water if needed. Stir frequently.

Meanwhile, heat a pan over medium heat, without oil and add the zucchini. Cook for 7-8 minutes until soft and slightly brown.

Add 2/3 of the amount of pesto and zucchini over the barley and mix well.

Serve immediately with tomato salad, arugula leaves and the rest of the pesto.

Chocolate cookies and baileys

I've wanted to try this kind of cookie for a while, but since my list of recipes I want to test is huge, it's pretty hard for me to decide sometimes, especially since now is the season for fresh fruit and I want to profit of them. The chocolate and baileys cookies look nice and are delicious!

  • 220 g flour
  • 150 g soft butter
  • 150 g sugar
  • 1 egg tied
  • 20 g cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 2 teaspoons vanilla extract / orange juice
  • 80 g chocolate
  • 100 g sweet cream
  • 1 tablespoon baileys (whiskey cream and / or rum)
  • Peanuts, nuts, raw peanuts optional

Mix the soft butter with the sugar, then add the egg, vanilla essence, cocoa, baking powder, baking soda and flour. Knead by hand to homogenize the composition well and then shape the dough with the palms into small balls the size of a walnut. We place them on baking paper or in a powdered tray with a little flour and with the finger / tail of a wooden spoon we press lightly in the middle of each ball to make a hole.

Refrigerate for 30 minutes to harden. This way they will keep their shape better. Preheat the oven to 180˚C, bake the biscuits for 7 minutes then take them out and press them again in the center of each cookie. Bake for another 5 minutes, remove from the oven and leave to cool in the pan.

Meanwhile, until they cool, we make the chocolate ganache. Heat the cream in a small saucepan, add the broken chocolate into small pieces, mix and then add the whiskey cream. We fill each cookie with a teaspoon of chocolate ganache.

Top with raw hazelnuts, walnuts, almonds or raw peanuts (NOT salted). I was inspired by this, with small adjustments.

Pilaf with mushrooms and white wine

Did you know that when boiled, all the alcohol in the wine evaporates and only the aroma and color remain?

For this reason, dishes containing wine can be served to all those who prefer a special flavor.
The French use a lot of red wine in steaks and marinades. The English use it in tarts stuffed with meat. And the Italians & # 8211 in pilaf, also called risotto, and in sauces.

I recommend a risotto recipe with mushrooms and white wine.

200 g of rice with small grain, rinsed and strained
300 g of mushrooms cut into large or whole slices, if small
75 g white wine
0.5 liters of chicken or vegetable broth
ripened cheese, Cheddar type, very cold and grated into large, thin slices
a large onion, cleaned and finely chopped
two cloves of garlic, crushed
half diced avocado
a bunch of lettuce or arugula leaves, broken into 2 cm pieces
ground black pepper
three tablespoons of oil

Method of preparation
Heat the oil in a thick-bottomed saucepan, then add the onion, mushrooms and garlic and simmer, without browning.
Add the rice and mix well so that the rice heats up and wraps in oil.
When the rice is hot, pour the white wine and let it simmer for half a minute, during which time the alcohol will evaporate.
Pour the broth, season with black pepper, cover with a lid and simmer for 20 minutes.
After 20 minutes, remove the pilaf from the heat and leave for another 20 minutes, so that the rice absorbs all the liquid.
The pilaf is served in individual plates, covered with green leaves, then avocado cubes (if you use them), and on top put the transparent and cold slices of cheese.
