These are my all time favourite cookies, a recipe I inherited from my gran. Crunchy on the outside and chewy in the centre - though be careful, they're addictive and the whole batch will be gone before you know it!

  • 180g cornflakes
  • 250g butter
  • 200g caster sugar
  • 1 1/2 teaspoons vanilla extract
  • 3 eggs (room temperature)
  • 280g self-raising flour
  • 175g chocolate chips
  • 60g sultanas

  1. Lightly crush half of the cornflakes, and leave the others as is.
  2. Preheat the oven to 180 C / Gas 4 and grease two large baking trays.
  3. Cream the butter and sugar with an electric mixer until pale and fluffy (light and creamy) then beat in the vanilla.
  4. Whisk the eggs then gradually add to butter mixture while keeping the electric mixer on high (avoid curdling by having the eggs at room temperature and adding to the butter mix gradually as it beats).
  5. Add in the flour and continue to beat with the electric mixer until well combined.
  6. Fold the lightly crushed cornflakes into the mixture with the chocolate chips and sultanas using a wooden spoon, until evenly dispersed.
  7. Drop dessertspoon sized balls of the mixture into the remaining uncrushed cornflakes and roll until coated, then press lightly onto the baking tray.
  8. Bake in the preheated oven for 15-20 minutes or until just golden. Remove from oven and allow to cool on the trays for 15-20 minutes before removing to wire racks (should be still warm when removing).

These were really delicious!My only tweak would probably be to add more cornflakes as I quickly ran out of them whilst rolling the dough into the uncrushed ones. Also, next time I'll probably to try crushing all of them and mixing them right into the mixture at the end.Overall, well done and thanks for sharing!-17 Jul 2011

Something else.You can also use baking paper instead of heavily greasing the tray - my grandma swears by the greasing but they turn out just fine on baking paper and don't make as much mess - it's up to you. It usually depends how lazy I'm being as to whether I'll grease or line the trays...-29 Mar 2010(Review from this site AU | NZ)
