Velvety moist chocolate sponge. Easy to make with the basic ingredients you always have in the store cupboard.

IngredientsMakes: 2 8" cakes
- 200g plain flour
- 200g caster sugar
- 2 teaspoons baking powder
- 1 teaspoon bicarbonate of soda
- 75g cocoa powder
- 200ml warm water
- 2 tablespoons lemon juice
- 125ml sunflower oil
- 1/2 teaspoon vanilla extract
MethodPrep:15min ›Cook:25min ›Ready in:40min
- Pre heat the oven to 180 C / Gas 4.
- Mix all ingredients together. Pour into greased baking tin. The mixture should be 2cm deep.
- Bake for 25 minutes.
- When cooked leave in tin for 5 minutes, then turn out onto cooling rack.

Great cake, although I believe missing one vital ingredient - salt. This would have brought the flavour out and made a big difference. i will make again, but I reckon I'll add a 1/2 tsp of salt.If that sounds wierd, it's quite normal to put salt in cakes. I have a recipe for a chocolate brownie that is amazing, one time I forgot to add the salt, and it wasn't that great.Lovely light and fluffy cake which is so easy to make.In terms of the comment about mixing for 5 minutes, with eggless cakes like this, don't over mix it. They turn out best if you mix it to an absolute minimum, even if there are small lumps in it, so don't waste your time with that, just give it a stir with a fork til "just mixed" and go for it. I did that and it turned out extra fluffy, even though I did it in a round cake pan and the batter was a lot thicker, about 10cm deep.-12 May 2012

So easy to make and the end result is amazing. At last a decent egg free sponge that doesn't rely on egg replacer and actually tastes like a proper cake-31 Dec 2011
